You may want to check out mumble, cross platform clients, uses opus codec and provides low latency comms, even on low end hardware.
I'n no expert in modern MacOS, but I do know brew is commonly used to install things: https://formulae.brew.sh/cask/mumble. The clients work on Windows/Linux and are installable on Android via the open source F-Droid 'app store'.
