I'll also take this opportunity to curse the nasty trend towards battered or coated fries. They are a vile and hideous creation and worse they make me wonder what the vendors are trying to hide underneath. I long for the good old days when places like Harvey's actually peeled their own potatoes in a machine right next to the deep friar, but no more.

I agree the machines that peeled the potatoes and then turned them into a slinky like think which was then cut and cooked. They were the best! Choose your own sauce.

On the West Coast, In 'n Out Burgers still slices potatoes into fries on-site. I think they're only out here, though.

I too noticed the lack of the "vinegar" option. Not that I would have selected it - even the barest sniff of that sour brew makes my face wrinkle in disgust.

I did see one person once pour ORANGE JUICE into a cardboard bucket of chips (fries), after they had added salt, vinegar and tomato sauce (not ketchup- it wasn't in the US).

I like ketchup, vinegar and salt with my chips, but with no option for this i had to go with only salt. My dad makes the best chips ever! btw, in Northern Ireland, we have the best potatoes and they are known as prootas where I live.

Idea for future vote, what's the best fat to fry your chips in? Vegetable or sunflower oil is acceptable, but the best has to be real lard.

What about poutine people? Fries + Salt + Cheese + Gravy = Yummy! (Well, when you work at McDonald's - remember that I'm 16 years old - half priced food is nice)

Anyway yeah, I'm eating a bowl of my poutine right now, so I think this was a really odd question to as right now =8-)

Anyway: I used to live in Utah, and I thought the ketchup+mayo combo was funky in the beginning, but it actually tasted alright.

However, my favorite way to eat fries is to use Marinara sauce. Either that or Mushroom and Garlic Pasta Sauce (Barilla being my brand of choice). I'm a sucker for the Italian flavors. You just can't go wrong with them.

A lot of people here (my $here = "Utah";) mix one part mayo with one part ketchup to make what they call "Fry Sauce."

It's actually not bad. I'm guessing there are people in other places do it too, but I don't live other places so it's hard for me to say. ;-)

Here in sunny NYC we call that "Fraunch Dressing" we drink it with "Peru" ;)

That mixture can be bought in jars, labelled "seafood sauce" or "seafood dressing". It's used to make prawn cocktail (Do you have that in Utah?) but anyone who knows makes it the way you do.

I can confirm that we too in the far reaches of Las Vegas also eat fry sauce. Mmmm... fry sauce... I like the excitment of ordering fry sauce in a different place to see what extra ingridient they will mix in. (BBQ sauce, relish, "assorted spices")

This makes me laugh to read - my wife went to BYU, and one time we were at dinner with some of our friends from Utah when one asked for some fry sauce - I'd never heard of it, and got this really confused look on my face and my wife just started laughing at me.

Fry sauce is actually one of my favorite options, although I voted for the bacon double cheeseburger. ;)

And that poutine stuff sounds just nasty. <shudders>

Arctic Circle used to give little packets (like Sweet & Sour Sauce cups at KFC) called "Fry Sauce". Damn that stuff is good (you have to mix it in just the right consistancy and with the right ingredients -- not just random stuff that you have lying in the ice box).

Too bad Arctic Circle is gone.

When I worked in a Japanese restaurant we made a wing sauce much like that...
Ketchup, mayo, about 50 50, add tabasco and paprika to taste.

Hum, I used to put that on salads and call it thousand-islandless (in reference to the fact that if it also had pickle relish it would be thousand island dressing.)

Mayo is actualy an egg and oil (I believe it's only the yellow part of the egg - not sure - help!?)

In a cooking class, I learned to make mayonnaise with egg yolks, walnut oil, and wine vinegar. Mustard and garlic are excellent additions.

Which was kind of a shock, because I had previously assumed that mayonnaise was one of the basic elements of the universe: earth, wind, fire, and mayonnaise.

1 tbsp mustard (english is good)
salt & pepper
2 egg yolks
1 1/4 cups oil (olive, sunflower..)
1 tbsp vinegar (white is good)

* Beat together mustard, salt, pepper, and yolks.

* Add oil a few drops at a time, beating into the egg
mixture until fluffy (add until you have no more oil 
left or are bored)

* Add vinegar a few drops at a time, beating into the 
egg and oil mixture until fluffy.  This will cause the
mixture to lighten in colour and smell and taste as
mayonaise should.  More vinegar can be added to taste.

* Use within 5 days.

The basic traditional ingredients are oil, eggs and salt. Then you add lemon juice or vinegar, and seasonings like paprika or mustard powder to taste. And it needs to be refrigerated.

If you're squirting it from a plastic bottle, and it looks like jelly and tastes like acid, then it is not proper mayonnaise. Or it's gone off :-)

In a blind taste test, tartar sauce was indistiguishable from CowboyNeal.

Yeah yeah yeah, heard it when I was there. And if the mayo wasn't weird enough it's also pretty common to eat them in a thin spaghetti sauce.

I miss french fry sandwiches though, "pain tzigane avec americain fort". A baguette filled with fries, some fried thing, and a sauce in this case "americain fort", a slightly spicy thousand island-ish sauce sans relish. and then they give you a small flat plastic pitchfork no larger than a silver dollar to eat it with.

Fries once saved my life!!

Once, I was sitting in a restaurant in Downtown Asheville, NC, beautiful little city BTW. I was minding my own binnis talking with some friends, when all of the sudden I heard a loud crashing and a whole lot of screaming. When I jumped up startled, trying to figure out what happened, I looked behind me, and about 4 feet away was a homeless looking man, with an old rusty 22 pistol in hand. He was squirming around on the ground, covered in food, and underneath his feet were a coupla fries and some Ketchup that a child had dropped!! So I take this pole personally and say, COVER THOSE FRIES, MAKE UM MORE SLIPPERY! Not that he would have done anything, and I probably would have laughed the whole robbery experience off. However, I came to appreciate those fried little potato wonders a bit more after that.

BBQ Sauce is better than ketchup. Though, it can be too much. So, i usually just mix the two for an excellent dip.

And that's when baked. When they're deep fried, especially for Cavendish Farms Shoestrings, just plain salt to be superior. It must be the potatoes that they use.
