Thanks for the lists. Perhaps I am greedy, but some ideas as to which of these largish apps are best written/best suited for for learning would be helpful.

The web sites of perlmyadmin, perlwebsite and openxp all have nonexisting or almost empty web pages. It would have been more helpful to point to the project pages instead.

Also, OpenXP seems to use "Assembly, Delphi/Kylix, Object Pascal, Pascal" (from the project page). How is this relevant to the original question?
