I don't think InstantCrud vs. Enzyme is the right way to put it. Both are equally useful. If you want something quick and dirty, like from the prompt, then InstantCrud is the way to go. I've used Enzyme in a test enviroment -- I eventually decided I needed more flexability than it provided (more than what's in most CRUD, in fact). I'd agree with Khen1950fx's comment that the best tool will depend on what your end goal/project is; for me, it was obvious that Instacrud wasn't going to give me the flex I needed from the start, for example.
Does that make sense? I know it sounds like a cop-out, but it's more a case of having ran into this issue over and again, and finding that there's no simple answer. At least, in my opinion....
