I'm amazed noone said saignant yet. My fav way. Translated as "rare", "underdone", or (ther literal version) "bleedy". The meet just momentarily hits the pan to get a nice brown touch, but the inside still nicely bleads. Yummie! BTW no dressing for me, just a bit of (black) pepper and some (sea) salt.
