If the encoding is utf-8 rather than iso8859-1 then you can use the XPosixAlpha class like this:

$ echo habíamos reservado habitaciones. | perl -CIO -pe 's/\p{XPosixAl
+pha}/-/g;'
-------- --------- ------------.
