I don't know anything about SNS; but looking at the source of Amazon::SNS, there appears to be an undocumented method Subscribe with the arguments $protocol, $topicarn, $endpoint - is this what you're looking for? The only reference to deleting something is the DeleteTopic method.

A quick search on CPAN shows the module Paws::SNS, does that perhaps help more? Update: That module also appears to be advertised by Amazon themselves.
