Of course you can manipulate the data. For example: 

  foreach my $record (values %$HoH) {
     $record->{label} =~ tr/A-Za-z/N-ZA-Mn-za-m/;
  }

Should perform the rot13 cryption on all the label fields. See perlop for =~, tr, etc.
