By de-referencing: 
my %hash = %{$sth->fetchrow_hashref()};

But you don't have to do that ... you could do something like: 
while (my $row = $sth->fetchrow_hashref()) {
   my $mail = $row->{mail};
   print "$mail\n";
}

just as easily IMHO.
