I like using JEdit with plugins. It has PerlBrowse and PerlSideKick plugins, as well as PHP, Python and of course Java support.

You customize JEdit through plugins. The plugins themself are easily configured.

It also has project, cvs and FTP save-as. I have been using it for several years and like it because it doesn't come bloated with a million features you'll never use, you add them as plugins as you need them.
