Take a look at Bacula.

"It comes by night and sucks the vital essence from your computers".

I'm using it since last year and it rocks.
It has what you ask and some more. Works on Macs.
Allows to backup Windows workstations with VSS shadow copy, even if I never managed to make that work: my fault.

Ah, it's free and open source.
