How should I pronounce {} for one syllable? Also, "escapes infinity" is 6 syllables,

Well I've taken poetic license, where {} and () are kept silent. :-)

As far as syllable count goes, it's a tough one, but slur your syllables to conform to 5-7-5, it can be done. The added s, to make escape an active verb, make escapes a 3 in my mind. Es scape ss :-)
