The subroutine call is completely different from yout hashref-dereference in 

  $data->{somekey1}{somekey2}

What you seem to be looking for (It is unclear from your description) is something like: 
$y='{channel}{item}';

foreach my $e (@{eval("\$data->$y")}){...
