You have a pattern matching problem in this code: 
my ($day, $from, $to) =
   ($day_hours =~ /([A-Za-z]+).*(\d+)-(\d+)/);

Matching "Mon 11-2", the ".*" matches " 1", so your interval is from 1 to 2. Don't use ".*" here. "\s+" would be better.
