A few suggestions:

Take a look at MS Kb:MAPI API as a Windows Service cannot open
Consider running your program as a Scheduled task, rather than as a service, to avoid service sandbox issues.
It appears that our bretheren in the python world and the Ruby world have encountered similar issues.
