    I use Carbon Emacs. Emacs with good font rendering and standard Mac keys supported. There is a vocal group who love TextMate. And of course Komodo runs well on a Mac.
      Mac OS X is Unix, so use your favorite Unix editor (Emacs or VI). For Emacs, check the Emacs Wiki for extensions.
        It's not just Unix -- there's the whole UI layer to integrate with. If you want to use Emacs, I strongly recommend the Carbon Emacs port. Without it, fonts look terrible compared to the rest of the Mac apps. Carbon Emacs doesn't need an X11 server either. And of course you can set the keys yourself, but having a simple option to use the common Mac keys is really handy.

    TextMate. Really deep. There are bundles for just about everything. Mostly I've used it for LaTeX but I'm sure there are at least a couple of Perl bundles. I haven't used it for Perl only because I don't have it on this box and I'm fine with Emacs which can be a better choice to at least be familiar with, or vim, because it will be there when you are in just about any dev environment.
