Googling for PGPLOT Postscript Output yields http://www.atnf.csiro.au/computing/software/miriad/userguide/node25.html, which claims device=plot.ps/ps is what you need to create Postscript output. Converting that further is a matter of applying Ghostscript, I would imagine.
