TextMate. Really deep. There are bundles for just about everything. Mostly I've used it for LaTeX but I'm sure there are at least a couple of Perl bundles. I haven't used it for Perl only because I don't have it on this box and I'm fine with Emacs which can be a better choice to at least be familiar with, or vim, because it will be there when you are in just about any dev environment.
