You could buy powdered egg-whites.

Also, egg-white and egg-yolk are more easily separated after preparation. For instance, you could fry your egg, then when done, use a chefs ring to cut away the egg-yolk.

Or you could just not eat the egg-yolk.

    They also sell egg whites in cartons. Look for them in your grocer's dairy section :-)
